A family favorite

Hello again,

I like to think that my blog is a place for random thoughts and different stuff that I want to share so in keeping with that, I would like to share a recipe that is a favorite of ours. I recently mentioned it on twitter to someone and thought it would be good to share the actual recipe that other people can enjoy it as well. We discovered this recipe in the Taste of Home magazine all the way back in 1997! It seems like 97 isn’t that long ago-I remember it like it was practically yesterday. Anyways this recipe is for chocolate cake in the microwave and takes so little time to make which is why I love it so much. Plus it tastes really good. šŸ™‚

MICROWAVE CHOCOLATE CAKE

1 1/2 cups all-purpose flour

1 cup sugar

3 tbsp baking cocoa

1 tsp baking soda

1/4 tsp salt

1 cup cold water

1/3 cup vegetable oil

1 tbsp vinegar

1 tsp vanilla extract

CHOCOLATE SAUCE

1 cup sugar

3 tbsp cornstarch

2 tbsp baking cocoa

1 cup boiling water

Dash salt

1 tbsp butter

1 tsp vanilla extract

In a bowl, combine the first 5 ingredients. Stir in water, oil, vinegar, and vanilla until well blended. Pour into ungreased 8-in square microwave safe dish. Microwave on high for 6-8 minutes or until a toothpick inserted near centre comes out clean.

In a 1 qt microwave safe bowl (I use a microwave safeĀ 4 cup measuring cup) combine sugar, cornstarch and cocoa. Stir in water and salt. Microwave on high for 2-3 minutes, stirring occasionally or until mixture boils. Microwave one minute more. Stir in butter and vanilla. Spoon over pieces of warm cake.

So that is the recipe and now I would like to share some of my variations. šŸ™‚

I like to add some chocolate chips to the cake and it adds a little something to it. The last time I made it, I added some blueberries and it actually worked nicely. I usually make extra sauceĀ – about 1.5times the recipe. We like the sauce so it disappearsĀ quickly. We also put ice cream on it as well and sometimes add crushed cookie crumbs on top and it makes a great tasting dessert! I think that is about all the variations we use.
